chicken and eggplant casserole

Just like we promised, here is one of our favorite recipes.
Low cal, low carb, and really good!

Here are the ingredients. 

2 medium eggplants. ( sliced thinly!!! )

2 jars of marinera sauce 
( gluten free, use organicville pasta sauce. )

1 rotisserie chicken

1 bag of mozzarella cheese

Serve with salad, and enjoy!
